I ordered some torshi to go from a Middle Eastern restaurant that has a few Persian items. I never remembered seeing torshi before so I thought I’d see what it is. Well ... It seems like asking what pickles are ... there...

I’m not happy with the store-bought versions I’ve found so I’m looking to make my own Persian mixed pickles (torshi). Does anyone have a recipe as well as tips regarding techniques? Thanks!
