Just returned recently from DF. Cominda at Cotramar was one of the best meals I have had in a long time and definitely a scene. We also ate at Pujol which was very good. Its great just to visit the various mercardos.

I think it’s a matter of semantics (and palate) at this point. The mole de olla I had a Pujol was certainly a sophisticated sauce, but it was balanced as well. All sauces, no matter the cuisine, benefit from being balanced....
