The Pegu Club in Soho sells Peychaud’s as does Lenell’s in Red Hook. Herbsaint is hard, but not impossible, to find here. Pernod is a decent substitute, even if it is a little less intense and a smidge less green.

Right at Houston and West Broadway is Pegu Club, which arguably has the best tails in town. I don’t think I’ve ever sampled their appetizers, but they always look good.
