Been there, done that, boring to me. I’m friends with the folks at PDT and I heard about it from them when they were playing with it, and tried “fat washing” with bacon myself. It was ok, but not my cup of tea....

I think you’d enjoy genuine craft tails rather than “Craft” tails. If you go to the flagship, why not make a reservation at PDT for pre/post dinner drinking?

all great palces - PDT is one of my faves. no one will lecture you, they will leave you alone, or talk to you about tails as you wish. i would add angel’s share, little branch, and tailor to your list
