please help! I am looking for a nutmeg grater that has a cup/catch on the back.

sugarcanejane, Is this the grater that you are seeking? http://www.richmonville.com/3002.htm. I have a similar grater, but I have found that a micro-plane does much better job. The little storage cup is cute, but whole nutmegs...

ISO a specific type of zester ... wide pieces

Another freezer question - lemon zest?

I freeze the rind whole. Well, un-zested. I wash the lemon, cut it in half, juice it, then stack the halves (nest them?). Just stick the stack in a baggie and freeze. When I need zest, I take one off the stack, and usually use a...

lemon juice in place of zest?

I agree w/Seldomsated. I’d highly recommend you get a Microplane zester – the zest will be so fine that you shouldn’t even be able to detect it in your baked goods. It adds such a nice bright flavor!

    Electric and/or cordless cheese graters

Screw the electrics, and go get yourself a Microplane grater from your local kitchen store for about 12 bucks. It makes beautiful fluffy clouds of Reggiano with minimal effort, shaves chocolate, is fantastic for zesting citrus,...

    Can I freeze ginger?

I freeze ginger in “one-recipe” chunks, wrapped tightly in foil. The papery stuff scapes off easily when frozen, and I micro-plane it frozen. I think it’s easier than fresh.
