Lemon Meringue Pie is edible, just not ideal. Keep the pie in a cool (not cold) place until serving time on the day it’s made.

They always served a very good one at Bubby’s (Brooklyn AND lower Manhattan!). And I think they sell whole pies to go, but at restaurant prices.
