there is not much monterey jack in either Madison or Milwaukee-there is something called co-jack however.

the moisture – toast, dried mushrooms, etc. The top layer is Co-Jack or cheddar cheese and sprinkled with paprika for color, added after the casserole is finished cooking a few minutes before serving.
