Low Fat Corned Beef and Cabbage
Just stick to the 1st cut portion of the brisket (the thinner, flatter part) where the fat is almost entirely in the cap. Simply trim off the fat cap and proceed as you normally would.

How can I salvage fermenting apple cider?
Just leave the cap a litle loose and keep it cool. There is almost no avoiding pasteurization, but it will keep for quite awhile and let it ferment at least a week or so.
